Recipes!

This seems to be an easy place to put my recipes that i have borrowed. Here are the tw o that i am asked about the most (alright one person for each...):

Leek and Potato Soup:

25 g/1oz Butter
4 rashers Bacon, chopped
4 large leeks, chopped
450 kg potatoes, peeled and chopped
salt n pepper
9000mls 1.5 pints light stock or water (veg/chicken stock is best)
150 ml / 1/4 pint milk

- Melt butter and saute bacon
-Stir in leeks, cover and sweat off for a few minutes.
- Add potatoes, season, and pour in stock.
- Bring to the boil, lower the heat and simmer for 30-40 minutes.
- Liquidise.
(i usually only go to here- Shiv, who gave me the recipe adds the following)
-Add Milk and reheat.

Brilliant soup. I quite often add a load of mushrooms as well.


Choc Chip Cookies

300g plain flour
1 tsp bicarb of soda
1 tsp salt
170g unsalted butter, melted and cooled slightly
215g light brown sugar
120g white sugar
1 tblspn vanilla extract
2 eggs
300g chocolate - i usually go for 2 x 200g bars, one milk and one white choc. (put 'em in the freezer for a bit, then stick in a sturdy plastic bag, cover with a tea towel and hit lots with a hammer!)

-Sift flour, bicarb and salt. Put to one side.

- stir, butter, brown & white sugar and vanilla. And the eggs one at a time.
- beat well to make sure eggs are distributed well.
- stir in dry ingredients
- fold in chocolate.
- you're done!

pre heat oven to about 190C/ gas mark 5.

- put small discs of the dough well spaced on a greased baking tray.
- bake for 10 -12 minutes max. Get 'em out while they're still soft. that's when they're best!

Yes, they will be sweet, but it's a cookie for crying out loud!
