wine update

The blackberry wine has been bottled, there was enough left over for SWMBO and i to sample a glass.

It's refreshing, but probably a bit thin, due to the extra AJ i added. But we'll see how it beds down and try again in a month or so. It's been put at the back of a small cupboard for now!

Blackberry Wine update

I've recently racked off the wine, mixing the contents of the two demijohns.

I've then resyphoned into the clean dj's for further conditioning. I think i'll rack once more then i will bottle and put this to one side for a few weeks.

Should be interesting...

Ponting (run out Flintoff)

Time for an update on Andrew and my Ashes celebratory brew, Ponting (run out Flintoff).

It's been in the FV now for 10 days, and due to a wedding i wasn't able to check the FG until sunday. It had settled on 1002 meaning we've got a 5.3% brew, which is cool!

Even now, the beer tastes good. It's definitely a step away from the lager but still clean and crisp.
So, I've added a further 25g of fuggles, in a hop bag, to the brew and we leave that to infuse for a week before bottling this beauty and laying her down for a couple of weeks!

Really looking forward to trying this, should be great!

Blackberry Wine

The brew was started on sunday 23rd august with the addition of hot water, pectolase and sugar to the defrosted berries .

I left it all day to get the temperature down to 21 degrees C - which is from the pectolase instructions. In the end i just pitched the stuff in as i was eager to get going! I think the temp wouldn't drop due to some yeasty activity with the extra sugar i put in, though this is pure speculation!

24 hours later i added yeast nutrient and champagne yeast. The recipe then stated to give the mixture a stir 2 times a day before racking to a demi john.

yesterday i sieved the liquid into an FV, which would make it easier to pour into a demijohn. I came away with about 7 litres of winey goodness and a muslin full of gunky berries!

With hindsight i should have created 1 complete berry wine, and done something with the leftovers. I was worried that i would dilute the remaining liquid too much.

However, instead i now have two fairly equal DJ's with apple and blackberry wine. Hopefully it'll turn out ok, but we'll see!

Well i've just checked on the airlocked dj's and they're bubbling away again nicely. They look great!
